This salad is extremely easy to throw together and perfect for a hot summer day. You can add protein to it if you would like as well (I would recommend grilled shrimp or chicken). I usually make a big bowl of it and bring it to a BBQ for all to share.
- A cup of fresh corn kernels cooked or a frozen bag thawed
- 2 avocados diced
- 5 plum tomatoes diced
- garlic salt
- lemon pepper
- balsamic vinegar or red wine vinegar
Combine the first three ingredients. Season with a little garlic salt, lemon pepper and vinegar – all as desired. Toss and serve.
